What divides the taste of coffee, it is said, is whether the grounds are uniform. When the particles are uneven, the finest ones give up too much bitterness, while the coarsest never give up their flavor at all.

Most hand mills use what is called a conical burr, which has the advantage of producing grounds of even size. The burr also turns slowly, so little friction heat builds up, and the flavor is said to suffer less from it.

It follows, then, that coffee ground slowly with a conical burr should taste good. The labor it takes has a reason behind it, commensurate with the effort.
